Make Me A Meal Monday: Shrimp Tacos

I am always looking for new and exciting recipes, and I found this one on pinterest from Real Simple.

Ingredients
1/2 cup sour cream
3 tablespoons mayonnaise
1/2 teaspoon ground cumin
1 1/2 pounds large shrimp, peeled
3 tablespoons butter, melted
2 large cloves garlic minced
4 limes cut into quarters
kosher salt
8 6" tortillas
2-3 cups of finely shredded cabbage
bottled tomatillo salsa

Heat grill to medium high.
Mix milk, sour cream, cumin and and mayo together. Set aside.
The recipe says to melt the butter, and add garlic. Brush shrimp with the mixture
{I made these a second time, and just brushed them lightly with olive oil and some grill seasoning.. which is a much healthier way to go about it anyway... I don't think the butter and garlic added too much flavor}
Cut limes into quarters

Place the shrimp and limes both on the grill at the same time, until the shrimp are opaque and the limes are brown.
Remove shrimp and limes from grill and lightly salt the shrimp
Grill the tortillas for 30 seconds on each side and place in a brown paper bag to keep warm

Assemble your tacos with shrimp, cream sauce, tomatillo salsa, and fresh lime juice.

Make Me A Meal Monday [Tuesday] - Fajitas

Sorry that this weeks edition of MMAMM is coming to you on Tuesday but this 3 day weekend I forgot to post this yesterday.

And my Top 2 Tuesday is a post below......

Alright but back to my Make Me a Meal Monday.... errr Tuesday

I found this recipe on Annie's Eats [if you haven't checked out her blog - you need to!]

Grilled Chicken Fajitas

Ingredients

1/3 cup freshly squeezed lime juice
6 tbsp vegetable oil
3 cloves of garlic
1 tbsp Worcestershire sauce
1 1/2 tsp brown sugar
1 jalapeno, seeded ribbed and diced
1/ 1/2 tbsp minced fresh cilantro
1 tsp salt
3/4 tsp pepper
3 boneless, skinless chicken breasts, butterflied [6 halves]
1 large red onion, sliced into 1/2 inch thick slices, rings not seperated
2 large bell peppers, stemmed, quartered and seeded
8 - 12 [6 inch] whole wheat tortillas


In medium bowl whisk together lime juice, 4 tablespoons of vegetable oil, garlic, Worcestershire sauce, brown sugar, japaleno, cilantro, salt and pepper.
Reserve 1/4 cup of the marinade and set aside
place chicken breast in marinade, cover with plastic wrap and refrigerate for 15 minutes
Brush both sides of onion rounds and peppers with remaining vegetable oil
Season with Salt and Pepper
Remove chicken breast halves from marinade and place onto grill along with peppers and onions
When chicken and vegetables are close to being done add your tortillas to the grill as well
Slice chicken, onion and peppers into strips
I put a bunch of toppings out for the fajitas as well
cheddar cheese, sour cream, salsa, limes, mexican rice, and black beans
wrap up your fajita and enjoy
