Happy Memorial Day and Make Me a Meal Monday


I hope you had a wonderful Memorial Day... and I hope you had a chance to think and reflect what this day is about! i appreciate every man and woman who has ever and who is currently serving for our country... they go every day and protect us so we can live freely... so thank you for anyone who has ever served.

this weekend has been quiet eventful... cookouts, friends, spending time in the sun

friday at work we had a cookout... its so nice to have something other than cafeteria food or frozen meals for lunch - and what better way to start Memorial Day weekend. we are all asked to sign up for a dish to make, and this time Nancy made smores - however i couldn't resist taking a picture of this kodak moment... roasting marshmallows over a charcoal grill
We had two cookouts this weekend - one on Friday at work and the other tonight with my parents next door neighbors - both times I brought the same dish (pretty convenient). I made cowboy caviar (trust me it sounds much more fancy than what it is)

Start by spreading cream cheese on the bottom your dish

Black Bean Mixture
1 can rinsed black beans
1 can black olives
1 small red onion
1 fresh squeezed lime
2 cloves of garlic
2 tablespoons of EVOO
3 tablespoons of fresh cilantro
3 dashes of cumin
1 tsp of salt
1 tsp of black pepper

Top with hard boiled eggs

Top with Green Onions

Serve with Tortilla Chips
(You can also just serve the black bean mixture as a dip without the cream cheese, green onions and hard boiled eggs)

I hope you had an enjoyable weekend. We had lots of fun with friends and family and enjoyed our time in the sun!

Like Justin told me on our way home tonight from our cookout - its the unofficial start of the summer!
