The world just got a little sweeter (times 2)

Today was a VERY special day....

I knew my friend Lauren was being induced today, but little did I know did I would come into work today to find an email from my dad saying that Melissa's water broke and they were on the way to the hospital. A few minutes later we found out that Lauren and Melissa were next door to one another in Labor and Delivery in the hospital.

and then I got over to the hospital and was patiently waiting with the grandparents when Bobbi Jo (Melissa's mom) and my Aunt went up to see if Melissa had started pushing yet when we heard a squeal - which instantly let us know that Addison had been born... at 2:55 p

Today was such an exciting day! I am so happy that I had a chance to see both of my friends [family] and their new additions! Congrats Lauren and Greg, and Jamie and Melissa! I am so happy for you all and I can't wait to watch these little babies grow up!

I hope ya'll had as great of a Thursday as I did!

Thank YOU for all of the support

I went to pick up my number and packet for the 1/2 marathon today... i can't believe its almost here, i am feeling all sorts of emotions at this point i'm nervous, anxious, but most of all excited!


This saturday i will set out to run 13.1 miles.... and i owe a lot of you a BIG THANK YOU! Whether you have given me advice or you have motivated me through posting information on your blog about your runs/workouts - i appreciate it! You all have helped me so much.

I am so thankful for the support system that has been me through this entire training process... although ashley and i signed up for the race together, we really haven't trained that much together... which surprises me even more that i have stuck with the training program and have not backed out of this race [i am notorious for starting out strong at working out and letting it fizzle]. i appreciate my friends, family and fellow bloggers asking about the marathon training, because i would be too embarrassed if someone asked me how it was going and i had quit... so i appreciate you all supporting me, motivating me, and asking me about my progress. i will be running this saturday and i can't wait to cross the finish line.

so thank you, thank you, THANK YOU!

Show us your life - how you met your husband/fiance/boyfriend

Today over a Kelly's Korner its all about how your met your husband/fiance [boyfriend]... and yes I am that annoying blogger who is going to participate even if Justin and I are still dating.

I always have a plan in life... surprised??? i planned on graduating from school, getting a job, living at home for a year, buying a condo and then potentially start looking for a boyfriend...

well those plans came to a screeching halt within 24 hours of moving back home from school...

my sister and i were both on semesters so we both moved back in the same day to our parents... and my mom has a 1 box rule - you unpack the box in the garage, dust detox it, and then put everything in the box away, or put it in the attic for your own place later down the road.. so alli and i had been unpacking boxes for 5 hours that morning, and i told her that i had been home for almost 24 hours without any chipotle, however we are going to wait until the lunch rush because i don't want to see ANYONE... we are to go with our diva sunglasses on, get our burrito bowls, not collect $200, and come RIGHT home to enjoy them before heading back to work on our unpacking...

so sure enough I roll up to chipotle looking lovely as ever i step out of the car wearing this...

i had to put back on the exact same outfit so ya'll could see how pitiful it actually was - the pink pants are terry cloth - i got them from the boat dock down in kentucky [what was i thinking], my hair was a HOT mess. and i had the ever so attractive soccer adidas sandals on - i mean who could resist this outfit! i'm surprised instyle didn't want me for their latest edition!

and who do i see? none other than Justin and Bret [who i have known since middle school], so of course I had to say hi to them, I couldn't just ignore them, we sat there and talked for a few minutes and Justin invited me up to a bar on Wednesday night where a bunch of guys from the home town hang out... and i thought to myself, why not? i have no friends now that i have graduated and left them all up in toledo, i might as well go up and join them for a drink... and the rest is history...

our first date was to the memorial tournament. i was all excited because i had tickets to the sunday's final round for the first time ever - and i was looking forward to it, but then my mom and dad told me that we had a memorial service for one of our family friend's dad's who had passed away, and i was going to have to miss the golf tournament to be with my family, which i was fine with, but a little bummed that i was going to be missing the tournament for the first time in 10 years... and thats when Justin said if i can get tickets for us, would you like to go on saturday.. i should have known at that point, that he would do anything to make me happy.. because he pulled through and got us tickets for the tournament - and we had so much fun. i will never forget standing talking to a girl i work with saying, if this guy can figure out a way to get us tickets to the memorial tournament this weekend, i will marry him... and low and behold here we are 4 years later...

i am so lucky that i have found him, he is my best friend, my rock, and the person i go to when i need support. he knows when i need a text message that simply says "i love you" or he knows when i need a hug even if i don't ask for one.. its amazing to know that i have someone in my life who knows me better than i know myself...

its amazing when you think you have your planned all figured out.. but then it goes to the wayside, because God has much bigger plans for you than you will even know. I'm beyond thankful that my plans didnt end up the way I initially planned them to be - my life is perfect - and i'm living my life one day at a time, with an amazing man right beside me!

lindsey and the no good, horrible, very bad day [morning]

Do you ever have those days when you just want to start all over again???? That would be my day today.. its been a rough one in the office already and the day is only 1/2 over [normally i'm a total optomist, however with today's crazy day in the office - i am ALLOWED to be a pessimist!] i have had to shut my door twice already today and cry [i am pretty sure i can thank auntie for the tears] but i have taken everything to heart today...
at least i have a few things to look forward to after 5:00 today
  • sonic route 44 diet coke - i totally deserve one
  • a nice long run
  • watching Justin's softball game [yes this is the 3rd one this week - get used to the schedule]
  • making food for a friend who just had a baby ["congrats you had a baby pasta" - shocker! ]
  • going to HomeGoods just to look [i promise just to look!]
  • coming home and relaxing

i am determinded to let this morning get the best of me.. this afternoon will be 100% better! right?!!? it has to be...

I need some advice


i am currently training for the 1/2 marathon that is coming up here in Columbus in a few more weeks [1.5 weeks to be exact but who is counting {eek}] so I am asking all of you to help me with any tips that you might have for running long distances... this is my first race EVER... so any help what so ever would be MUCH appreciated [things that you do to keep you motivated, how you over come the want to stop, ect]

the other advice i need from ya'll happens to be in attire... and i know that we all love talking clothes and fashion right - right!??! does anyone have any suggestions on what to wear for race day. I have a few stipulations.. i don't wear shorts [hello cottage cheese on the backsides of my legs] and i am not quiet ready for spandex [will i ever be ready?] so i'm thinking about buying a pair of capri pants for the bottoms but i want to know a good brand, something that doesn't ride up on you when you run, and something that will be comfortable on race day- and who knows what on top.. so i'm open to suggestions ANY suggestions that you may have

now that the weather is getting warmer [finally] i am able to break out some of my spring clothes.. and i have started a small collection of boyfriend tees[i need to tame myself before it gets out of control]...i can't help it- i.love.them - they are so easy to wear with jeans, and i through them on to do whatever, run errands, go to the ball park to watch jm, to work out... they are wonderful - here are a few of the ones that were currently clean... i typically get them at target, however this year i picked up a few at old navy, and jc penney as well

i really waffled for my second choice but I think i'm going to have to go with old navy wedge flip flops. i wear my gray ones just about every day, they never quiet make it up to my room to be put away - they are my go-to shoes for the summer [besides my sperry topsiders] they give me a little bit of height yet they are still practical

i'm off to the ball diamond for the night - tonight starts softball season... i am always excited for the start of softball season however after 3 nights a week for 12 weeks, i am ready to be done with spending my evenings up at the park [and yes i know i don't always have to go - and i don't but sometimes its nice to be outside and not be cooped up inside at my house alone - ya know!?] and i may be a bit of a worrier... and if something would happen to justin i want to be there [if i'm this way with a 27 year old can you only imagine what i will be like with kids one day? - eek!]

Weeked Recap

So sorry blogging friends for not updating since Tuesday... I really didn't think much about it [weird huh!]- however Justin, my parents, and my sister all said something to me about it today.... making sure I was okay since I hadn't blogged for almost a week.

Thursday night I made these cute little treats for a potluck at work - individualized fruit pizzas [the trick is that i bought store bought sugar cookies] made my cream cheese frosting and placed my fruit on top...
Saturday morning I went to a baby sprinkle for Lauren... Ashley hosted it at Mimi's [yum!] - i am so excited for this little one, truitt to have a baby brother - is truitt not the cutest little one in the whole wide world

today i went shopping with jaci.. and i asked her if we could go to walmart... now to most, this is not an exciting adventure, however this just happens to be my first time ever shopping at walmart... and what an experience it was..i was pleasantly surprised, and really enjoyed myself! i had to capture the moment of course! ha

sunday night we always have dinner with my parents, however tonight we celebrated some exciting news in our family - my sisters engagement! they got engaged 2 weeks ago in denver, however it was the first time we had seen each other since doug had popped the question.

i had to get a little something for my sister - so we put together this basket, including a chew diamond ring for lily - their dog
and if that wasn't enough excitement for one day, my sister asked me to be her maid of honor, and of course i said yes, i wouldn't want to be anywhere else on her big day! congrats alli and doug!

Top 2 Tuesday - Beauty Secrets

I can't believe its Tuesday again already... as you all know the drill by now [and if not - welcome!] Taylor host's a blog hop every Tuesday with new interesting topics.. this week it just so happens to be Beauty Secrets... and i am always up for a hint or a new trick, so i can't wait to read everyone's blogs tonight :) but in the meantime here are a few of my tips for you...

Forget the shave gel, bring on the conditioner
conditioner is good for your hair follicles [hence why you use it after you have used your shampoo] it is also less expensive than your average shave gel. conditioner typically has a built in moisturizer as well


apply chapstick before testing out a new lip stick color
i learned this the hard way through many years of competitive tap dancing and we all had to wear bright red lipstick [Revlon's poppy silk red to be exact] if you apply chapstick and then apply your lipstick, it will come right off, so if you are trying out a new color of lipstick, i would highly recommend this technique

Make Me A Meal - Buffalo Chicken Mac and Cheese

I apologize that I have been slacking on Make Me a Meal Monday... to be honest with you, I have not tried any new recipes.. well except the two that I found in the Food Network Magazine that I recently picked up... one was a complete and total flop [chicken and pasta soup - which was made in the crock pot] and the other was really tasty, however not really easy... and that brings us to today...

Buffalo Chicken Mac and Cheese

This meal was really good, but not easy [not easy at all!] - there is a reason that Kraft has an empire in mac and cheese.. ha! but if you like a dish that will leave you with a labor of love and a delicious meal - then it may be worth it! {it also is NOT a healthy meal by any means} and I thought it wasn't overly spicy at all - on a level of 1 to 10 of spice level - i think it would be a 3

Ingredients
7 tablespoons unsalted butter
kosher salt
1 lb of elbow macaroni
1 small onion, finely chopped
2 stalks of celery, finely chopped
3 cups shredded [if you know me cubed] rotisserie chicken
2 cloves garlic, minced
3/4 cup hot sauce [preferably Frank's]
2 tablespoons all purpose flour
2 teaspoons dry mustard
2 1/2 cups half and half [i used 1/2 cup half and half and 2 cups of skim milk]
1 lb of yellow sharp cheddar cheese cut into 1" cubes
8 oz pepper jack cheese, shredded
2/3 cups sour cream
1 cup panko bread crumbs
1/2 cup crumbled blue cheese
2 tablespoons chopped fresh parsley


Preheat oven to 350 degrees and butter [i used cooking spray] a 9"x13" pan
Chop up chicken, onion, celery and garlic

Cook noodles as directed on the box [i used whole wheat pasta]

Melt 3 tablespoons of butter in a large skillet over medium heat. Add onion and celery and cook until soft, about 5 minutes.

Stir in chicken and garlic and cook 2 minutes then add 1/2 cup of hot sauce and simmer until slightly thickened about 1 more minute
i made sure i had all of the pieces of the next step right next to the pan pre-measured so it didn't cause me to burn anything or miss a step

melt 2 tablespoons butter in a sauce pan over medium heat, stir in the flour and mustard with a wooden spoon [or plastic if thats all you have] until smooth.

whisk in the half and half [i only used 1/2 cup half and half and then 2 cups of skim milk]

and add the additional 1/4 hot sauce and stir until thick, about 2 minutes

whisk in in the cheddar and pepper jack cheeses
then whisk in the sour cream until smooth


spread half of the macaroni in the prepared baking dish, then top with the chicken mixture and the remaining macaroni

pour the cheese sauce evenly over the top

I made the casserole part of the dish the night before - and I was EXHAUSTED after cooking this dish... [even sweating!]... i typically wouldn't post a lovely picture such as this - however i don't want ya'll to think that this dish was an easy one...

The topping


put the remaining 2 tablespoons butter in a medium microwave-safe bowl and microwave until melted. Stir in panko, blue cheese and parsley

Sprinkle over the macaroni and bake until bubbly, 30-40 minutes.

Let rest 10 minutes before serving.
